Shingen is a soba izakaya tucked inside Stix Asia, the lower-level food hall at Waikiki Shopping Plaza. Buckwheat flour imported from Shintoku, Hokkaido — handmade fresh in the kitchen daily. Three handmade noodle styles, all $16 cold (seiro) or hot (kake): traditional soba (nutty Hokkaido buckwheat), moringa soba (limited daily — herbal, antioxidant-rich), and ube udon (purple yam noodles, the photo-worthy one). Order all three if you're with people. For your first time, go cold — that's how you taste the actual noodle.
