Shingen is a soba izakaya tucked inside Stix Asia, the lower-level food hall at Waikiki Shopping Plaza. Buckwheat flour imported from Shintoku, Hokkaido — handmade fresh in the kitchen daily. Owner-chef Hiroya took over about a year ago after working his way through KCC. Small operation, real ownership pride — you taste it in the details.
If you're searching for a real Japanese restaurant in Waikiki — not a tourist trap with frozen tempura — this is the spot. The only ube udon in Waikiki, plus moringa soba and traditional Hokkaido seiro soba.
Three handmade noodle styles, all $16 cold (seiro) or hot (kake): traditional soba (nutty Hokkaido buckwheat), moringa soba (limited daily — herbal, antioxidant-rich), and ube udon (purple yam noodles, the photo-worthy one). Order all three if you're with people. For your first time, go cold — that's how you taste the actual noodle.

Chashu Don ($26) — 180g of slow-braised pork belly over rice with onsen egg, red pickled ginger, and Japanese mustard. Tempura — light, crisp, never greasy; eat it hot.

After your soba, the staff brings a small red lacquered kettle of sobayu — the cloudy hot water the noodles were boiled in. Pour it into the leftover dipping sauce and drink it like soup. Rich in rutin, gentle on the stomach, the traditional way to finish. Most tourists skip it. Don't.
