Forget everything you know about ordering shave ice in Hawaii. No more staring at a board of 40+ syrups trying to figure out which three flavors won't taste weird together.
Sin Ice Stir (pronounced "sinister") just opened on Kalakaua Avenue, and they're doing something completely different. Owner Bill Tobin β who also owns Tiki's Grill & Bar upstairs β brought in his executive chef to create a curated shave ice experience.
What Makes Sin Ice Stir Different?

Here's how Bill explained it to me:
"A lot of shave ice places have 40 different flavors on the wall. If you put three flavors together, they might sound really good, but when you put them on the shave ice and they mix together at the bottom, it might be really sweet but it might not be good. We specifically picked flavors that taste delicious on the ice but also when you get down to the bottom and those flavors mix together. We've tested everything."
The flavors were developed by Chef Ronnie Nasuti β Executive Chef of Tiki's Grill & Bar β and Chef Vanessa Mello. They created 44 housemade syrups and designed each shave ice as a complete recipe.
Every recipe starts the same way: shave ice layered over an ice cream base. Then comes the chef-selected syrups and toppings.
Nice vs. Naughty: Understanding the Menu

The menu is split into two personalities β a nod to the original concept, which was going to be a bar with shave ice. As Bill told me:
"Even though we say 'naughty,' it's a good kind of bad. Nobody's going overboard with anything β we're just having fun."
NICE (Blue)
Flavors that people are mostly familiar with and comfortable with. Easily approachable. Example: Soft Launch is strawberry matcha β people are very familiar with that.
NAUGHTY (Red)
A little more adventurous, a little more extreme. Example: The Wanted is spiced mango and li hing guava β familiar tropical fruits with added spices to make them more adventurous.
What to Order at Sin Ice Stir

I asked Bill what he recommends for first-timers:
"I would say Shark Bait if they're not very adventurous. If they're adventurous, I would say try Adult Supervision. It's delicious β it's made with Froot Loops and has a Froot Loop flavor but also lavender honey."

Start here. It's the most popular for a reason β rainbow colors for the 'gram, gummy sharks for fun, and flavors everyone loves.
Adult Supervision
The owner's personal favorite. Bill says it's delicious β Froot Loop syrup with lavender honey. Only available through January!

"It's a beautiful view every day. We're looking at our customers but we also get to look out at the ocean and see surfers, people swimming, boats going by, and the waves. It's really nice."
