Bonbori just opened at Midtown Eats, and it's set up a little differently than most stalls in the food hall: it shares its counter with Dragon Burger. Order a burger and a bowl of ramen in the same stop, from the same stall, and neither kitchen makes you wait on the other.
I stopped by to talk to the manager before I'd eaten, so this is a first look, not a full review — no rating yet, and I'm not going to tell you what to order until I've actually ordered it. I'm going back to eat and will update this with real tasting notes, photos of the bowls, and a full verdict.

Hokkaido Roots
Bonbori comes from Yoichi, a town in Hokkaido — Japan's northernmost main island, known for its own regional ramen styles distinct from the tonkotsu ramen of Kyushu or the shoyu styles more common further south.
The shop's signage describes it as "Michelin-Chef-Supervised Japanese Ramen." The fuller picture, from the restaurant's own social presence: Bonbori is developed under Tokuichi, a well-known Sapporo ramen house, with a Michelin connection through chef Ishii of Le Musée, a one-Michelin-star restaurant. So the pedigree runs from a Michelin-starred chef, through a Sapporo ramen producer, to this specific shop — which is a real and interesting chain, even if it's not the same as a Michelin chef personally running the Honolulu counter.
Hours & How to Order
Hours aren't confirmed yet — I'll update this once I know whether Bonbori runs the same schedule as Dragon Burger (11 AM–2 PM and 5 PM–8 PM) or keeps different hours.
Payment is cards only, same as everywhere else in Midtown Eats — no cash accepted anywhere in the food hall.
